Welcome back, friends. Today the sun came out and we had a typical hot Alabama winter weather day. Today reminded me of summer, so I had a craving for nachos (nachos make me think of summer – do not ask me why because I do not know). Two of my cross country teammates let me talk them into eating and cooking with me tonight. I highly recommend making this meal with your friends, significant other or a stranger you meet in class; this way you can split the cost too!
We journeyed our way into Publix and the night began.
Gluten Free + Dairy Free Nachos
Prep Time: 30 Min – Cook Time: 15 Min – Total Time: 45 Min
Cost: $15.51 + tax (we split three ways so around $5 per person)
- Pack of 24 Corn Tortillas $2.09
- 4 Oz can of Chopped Olives $1.29
- .63 lb of Chicken Tenderloins $3.58 (can be more or less — we went w/ cheapest option)
- Follow Your Heart Vegan Gourmet Cheese Alternative (Cheddar) $3.99
- Follow Your Heart Vegan Gourmet Cheese Alternative (Mozzarella) $3.99
- 15.5 Oz can of Black Beans $0.57
STEP 1: Pre-heat oven 350’F
STEP 2: Put chicken tenderloins in the oven for 20 Min
STEP 3: Cut tortillas into fourth’s (chip-shaped) align on pans and bake in oven 10min or until crispy
– (we had to use 3x – all depends on how large your pans are)
– This will make the corn chips
STEP 4: Once chicken is done, blend in food processor till shredded or shred with fork
STEP 5: This is where it could get interesting… making grated cheese. Pull out a plate and a cheese grater. Take sliced cheese and grate your cheese slices as a block.
STEP 6: Assemble your nachos in a 13″ x 9″ baking dish.

STEP 7: Bake for 15 Min in oven @ 350′ F
STEP 8: EAT WITH FRIENDS + DOG

This meal was not too time-consuming and was an easy meal to make. When first making this I did not know/think it would fill me up, but trust me it very much did. This nacho recipe is one I will definitely make with again. We probably would have not eaten as much if it was not for running and being outside by the pool all day. This could have easily fed five people. Does anyone want the leftovers, because there is plenty left. This meal receives a solid 10/10. Make it with friends, make it for a party or make it for your vegan friends (just do not add chicken).
