Zucchini Shrimp Zoodle Pasta

Sun, rain, tornadoes and everything else came through Troy, Alabama, this week. That’s OK, I still ate good! This week I made a Zucchini Shrimp Pasta. Aaron was out of town filing a wedding (ALWAYS), so one of my sorority sisters took his place on eating.

This recipe requires a vegtable spiralizer. Best $3 I have spent at GoodWill. You can find them at Walmart, Target or on Amazon


Prep Time: 10 Min | Cook Time: 15 Min | Total Time: 25-30 Min

INGREDIENTS: 

  1. 2 Medium Zucchini
    • $1.48 @ Publix
  2. 2 Cups of Medium Shrimp
    • $4.42 @ Walmart
  3. 1 TBS Minced Garlic
  4. 2 TBS Dairy Free Butter

Side Note: You can add lemon for extra flavor… I just forgot to buy some at the store.

DIRECTIONS:

  1. Simmer Garlic and Butter in large Sauce Pan
  2. Take two medium zuccini and noodle them
  3. Add Shrimp to Pan and cook for 7 min
  4. Add Zucchini to pan for only 5 min
  5. Stir and Mix
  6. Enjoy

I probably could have done a little better on this, but I havent made it in a while. Still tasted just as good! It is a healthy option and yummy everytime. Thankful for good friends that let them feed you all the time. This is a fun date night meal that you can make together too. So go out; noodle your zoodles and have a good Sunday!
